Like all of Iio Jozo's vinegars, Purple Sweet Potato Vinegar begins not with vinegar, but with sake. Murasaki Masari sweet potatoes from Kagoshima are gently steamed to concentrate their natural sweetness, then brewed into sake before being slowly transformed into vinegar through traditional static fermentation and long aging. The entire process takes more than eight months.
The result is unlike any vinegar we've tasted. Brilliant ruby-purple in color, it offers earthy sweet potato notes balanced by the mellow, rounded character of a superb red wine vinegar. Bright and complex, it's equally at home in vibrant pickles and dressings or simply diluted with still or sparkling water for a refreshing vinegar drink.
